Where are you from/where did you grow up?
I was born in Oslo, Norway. I came to US as a student for my Bachelor's at the University of San Francisco. After graduation, I had the possibility to get a 1-year work visa and chose to came to NYC. I fell in love with the city and met the love of my life. With our second child on the way, we moved to Brooklyn. First Boerum Hill and then Sunset Park. Coming to Brooklyn I felt home. I love our neighborhood, the park, the diversity, and the sense of a strong community. A bonus is that my bakery is a short 5 min bike ride downhill to the Brooklyn Army Terminal.
Why did you start your business?
It all traces back to that one summer at home in Norway...there was a luscious just-baked scent floating through the air and I followed my senses straight to my Aunt Liv’s kitchen. I found her baking the most delectable Crispbread. It was love at first bite and I thought we don't have this in the US. She taught me how to craft them using our decades-old family recipe. I was hooked. So back to my second, more permanent home in Brooklyn I went, where I started experimenting with the family recipe and serving it to friends and family (lucky them!). Altering the ingredients a few times to find the perfect balance, I finally honed it. Thus, Norwegian Baked was born.
How does your business connect to Brooklyn?
There used to be a big community of Norwegian immigrants in Sunset Park and Bayridge.
